Greek Yogurt Mac and Cheese with Bacon

  • 3-6 slices of uncured bacon farmers market find!
  • 2 C. dry pasta
  • ½ C. raw milk cheddar cheese grated
  • ½ C. Monterey jack cheese grated
  • 3 T. plain Greek yogurt
  • pinch of garlic powder
  • pinch of onion powder
  • pinch of cayenne powder
  • salt and pepper to taste


  1. Cook bacon to desired crispness. Chop and set aside.
  2. Bring a pot of water to a boil, then boil pasta until desired tenderness.
  3. Grate cheeses while pasta is cooking.
  4. Drain nearly all the water out of the pasta pot, but leave a little bit and place back on the stove on medium heat.
  5. Stir in cheese and seasonings.
  6. Remove from heat and stir in heaping spoon of yogurt.
  7. Stir until creamy.
  8. Stir in bacon and add salt and pepper to taste
