This caprese pasta salad is a fast way to make a quick lunch or snack that tastes fresh and light!

Ingredients

  • 2 C. dry rotini pasta
  • 1 C. chopped tomatoes
  • 1 T. minced garlic
  • 10-12 basil leaves
  • 1/2 C. mozzarella pearls
  • 2 T. olive oil
  • Salt
  • Pepper
  • 2 T. lemon juice
  • Optional:
  • Black olives
  • Bell peppers

Instructions

  1. Boil pasta according to the directions. Drain and set aside to cool.
  2. Chop tomatoes and garlic, and chiffonade the basil (cut into strips).
  3. When pasta cools, toss pasta with tomatoes, garlic, cheese, basil and 2 T. lemon juice.
  4. Drizzle it all with olive oil (up to 2 T.).
  5. Salt and pepper to taste.
