This is my go-to pasta sauce. It can easily be scaled up or down, and is bright and flavorful without the day-long simmer of a traditional marinara sauce. It’s also super quick and easy, and is perfect for a weeknight meal. This time, I made a double batch for my community group. But it’s often the base for much that we do around here. (It would probably also be a great pizza sauce.)

There really are only four ingredients in fresh pasta. And with a little bit of love, you can have it in your home – either now or later! It can be cooked right away (which I do with ravioli, as featured here), or even hung to dry for a day or two. It cooks up a little differently, but tasty all the same. I found that when I cooked the noodles which had been dried, they gave me a bit more of an eggy flavor, perfect for another recipe I’ve got in mind…

I fell in love with making pasta in high school. I took a Creative Foods class with one of the greatest teachers ever (it’s probably because she’s British and we loved getting her to say “butter” with a hard “R” sound). One of our tasks one week was to prepare fresh pasta. The whole process was absolutely nuts with 4 people to a kitchen station. After that class, I pined away for fresh pasta, but never again made my own. Until I got married. And someone was actually crazy enough to purchase a pasta machine I had put on our registry like we would USE it.

Everybody loves macaroni and cheese, right? It’s very high on my list. Partly because cheese is a main ingredient, and it is on “the list” of foods I would live on. I’ll eat it all – fake cheese, real cheese, rotini, shells. Like…I love a good greek yogurt mac but also would kill over a bowl of Velveeta shells. Foodie struggles. My dad always used to say if I kept eating so many noodles, I would turn into one. Luckily…I’m almost 24 and still not a noodle!
