One-Pan Dinner: Roasted Chicken & Vegetables

July 21, 2016 by 918 Plate 2 Comments

This one-pan roasted chicken cooks the main dish and the vegetables at the same time, for an easy dinner and minimal clean-up!

This one-pan dinner of roasted chicken cooks the main dish and the vegetables at the same time, for an easy dinner and minimal clean-up!

After preparing this gorgeous chicken a few weeks ago for Farmer Chris, I got in my brain that I wanted to refine my whole chicken cooking skills! While the shoot made for a gorgeous bird (if I do say so myself), it didn’t quite have the flavor profile I was looking for – so I tried again. The one-pan roasted chicken method is tried and true, I read about it on theKitchn – placing the chicken on a bed of vegetables in cast-iron to reap the benefits of chicken juice on your vegetables!…

These grilled chicken skewers are served with a fresh taste of summer – garden herbs galore!

We got home from vacation and realized two things: 1. Our garden has really taken off! And 2. We have no food in our house. Today was the last straw, so we were “forced” to go get the double deals at Sprouts!…

Greek Yogurt Chicken Salad

April 7, 2016 by 918 Plate 2 Comments

Who doesn’t love an easy chicken salad? Well…me, at one point. I think it’s because I have this distaste for all condiments besides BBQ sauce, and mayo just doesn’t ever really cut it for me. Although I’ve definitely warmed up to mayo in chicken salad, I knew there was a way to health-ify this lunch favorite. It turns out, you can use plain Greek yogurt! Yep – even though I also use it for sour cream. It’s so versatile!

This easy, healthy, Greek yogurt chicken salad is great for lunch packing or a springtime picnic!

Mushroom & Swiss Chicken Thighs

February 25, 2016 by 918 Plate 1 Comment

These mushroom & Swiss chicken thighs were a super easy dish that I threw together with some of my sage that I brought inside for the winter. It’s growing right along, but between this recipe and the pork chops, I’ve had to give my little plant a bit of a break. It will be ready soon for more brown butter recipes and meat seasoning, I’m sure.

These chicken thighs are made in one pan along with its own delicious cheesy sauce, too!

30 Minutes or Less: Chicken Lettuce Wraps

January 21, 2016 by 918 Plate 4 Comments

Confession: I don’t really eat lettuce. That being said, I had some salad with dinner today. Which was mostly ranch dressing…Lettuce is simply a vessel for bigger and better things, let’s be real here. It’s the same with these chicken lettuce wraps. If you don’t have any lettuce, it’s still a great filling for tortilla wraps, or eating straight out of the pan by the spoonful.

These Chicken Lettuce Wraps are a better-than PF Chang's copycat, made with homemade hoisin sauce!

Chicken and Dumplings

October 29, 2015 by 918 Plate 8 Comments

This post’s main product of pastured chicken was provided as a sample by Cars and Cows Farm in Pemeta, Oklahoma. Opinions of the product are my own.

Y’all. I feel like an official Oklahoman now. This chicken & dumpling recipe has everything I love about Cracker Barrel’s chicken & dumplings. What’s not to love? Salty broth with squishy dumplings?? Now THAT sounds like a food I could eat every day. Seriously. With half a chicken, we even generously fed 4!

These Cracker Barrel lookalikes are made from fresh, local, pastured chicken!…
