Holiday Leftovers: Ham Sandwich

When I was in elementary school, I starred (along with my dad) in a local production of The Best Christmas Pageant Ever. It’s a story about a group of rowdy kids that get cast in the church’s Christmas play after stumbling into church because they heard there were snacks. It was charming. The Wise Men brought baby Jesus a Ham from their family’s food basket. I think that was my first exposure to the idea of a “Christmas Ham.” My family always did turkey for both Thanksgiving and Christmas, but we always had ham for Easter. But, if your family does ham, I’ve got a GREAT holiday leftovers idea for you!

This sandwich is like a grown-up grilled ham & cheese sandwich, and a perfect way to use up your holiday leftovers!

I always had a similar leftover experience, but a little earlier in the year. Sandwiches are obviously the easiest way to get rid of your extra meat, but I would always just eat ham and bread. Because I was picky. And it was pretty dry, and the bread always stuck to the top of my mouth (<< why I don’t really eat sandwiches). Now, my palate has expanded (a little), and I made this killer sandwich that I think you’ll enjoy. And if you’re anything like us, you’ll probably have these items more or less on-hand.

Here was my thought process: ham is great with Brie. Brie is great with mushrooms. What about a Ham-Brie-Mushroom sandwich??? I’ve just recently become a mushroom convert (and still, only certain kinds, prepared certain ways). Plus, they’re cooked in butter, so you can’t reaaaaally go wrong here. It’s like a grown-up grilled ham & cheese!

I don’t really need to tell you how to make a sandwich. Put all the components together and enJOY this panini-style grilled cheese!

Holiday Leftovers: Ham Sandwich

Prep Time 15 minutes
Cook Time 5 minutes
Total Time 20 minutes

Ingredients

  • 1 1/2 T. Butter
  • 5-6 sliced crimini mushrooms
  • Leftover ham
  • Your favorite triple creme Brie
  • Your favorite bread  local
  • Extra butter for frying

Instructions

  1. Saute the mushrooms on low with the butter until they have softened to your liking.
  2. Toast the bread with a bit of butter, and place 2 slices of Brie on top.
  3. Add mushrooms and ham on top, along with the other piece of bread.
  4. Flip the sandwich and toast on the other side!
  5. Heat in toaster oven or oven until ready to serve!
  6. EnJOY!

    We always bought a ham way too big for our needs for Christmas, just so we could have ham sandwiches for the next few days. Like the addition of the brie and mushrooms.
