Greek Yogurt Chicken Salad

Who doesn’t love an easy chicken salad? Well…me, at one point. I think it’s because I have this distaste for all condiments besides BBQ sauce, and mayo just doesn’t ever really cut it for me. Although I’ve definitely warmed up to mayo in chicken salad, I knew there was a way to health-ify this lunch favorite. It turns out, you can use plain Greek yogurt! Yep – even though I also use it for sour cream. It’s so versatile!

This easy, healthy, Greek yogurt chicken salad is great for lunch packing or a springtime picnic!

This recipe is hardly a recipe at all! Just throw everything together and serve it however you like. I took it to work and ate it for lunch on a toasted English muffin. Just trust me and do it. You can also feel free to add nuts, take out the celery, add green onions, whatever floats your boat. My very first favorite chicken salad had pineapples in it, thanks to my friend’s mom, Donna. Real talk: I was going to add almonds to mine but then the ones I had were bad…sad day.

Local Spotlight: Chives and Sage (home garden!)
Fun story about my chives – they started out in a little pot from a grocery store right after I got married. They were about the same thickness as soft grass. I constantly Googled chives to see if mine were doing okay. They lived on our porch at the apartment, and looked like they died over the winter. But then alas, they came back! And then we moved to the house, and I planted them in the garden (mostly in a last-ditch effort to ward off some bugs). Then I cut them down to the dirt basically this winter and this past month it’s been back with a vengeance and even BLOOMING! Anyway, I think it is super exciting to watch something grow. It’s like our love fern! All I can say for the sage is that I brought it inside and I’m glad it made it through the winter.

I’m keeping this post short and sweet, mostly because you shouldn’t need a terrible amount of help and I can’t think about this Greek yogurt chicken salad anymore or I’ll need to stir up a batch right now.

Greek Yogurt Chicken Salad

Ingredients

  • Greek Yogurt Chicken Salad
  • 3/4 C chopped celery
  • 1 C. chopped grapes
  • 1 1/2 C. shredded chicken
  • 1 C. plain Greek yogurt
  • 1/4 t. pepper
  • 1/2 t. salt
  • 1/4 t. onion powder
  • 1 :4 t. garlic powder
  • Juice of half lemon
  • 1 T. chives chopped (homegrown)
  • 5-8 sage leaves chopped (homegrown)

Instructions

  1. Chop celery, grapes, chives and sage.
  2. Add in shredded chicken and yogurt and incorporate together.
  3. Season with remaining ingredients to taste!
  4. EnJOY!

    This looks great sweetie! I will try it with Kathy. Of course without the green onions/chives. You know how I am about those ! Ha but adding the omens sounds great !
