Garden Salsa

This week, I’m hitting you with two posts, since last week I was unfortunately forced off the Blog Boat by a hard drive crash. It was so sad, but I am up and running on El Capitan and everything is good to go!

This is a quick and easy salsa recipe that comes together fast for gameday fun!

This is an easy recipe for game day. Any game day. Baseball is in an exciting time, basketball is about to start, and of COURSE football is in full swing. No sporting weekend can be complete without chips and salsa. Tortilla chips are even naturally gluten-free friendly, for my football fanatic bestie.

I like to give my garden salsa a few whirs in the food processor (I’ve got this one) to make it nice and blended. Lucky for me, my tomato plants are just now on our way out. That means we have lots of salsa around these parts. As much as I use onions, I think I want to try to grow those next year too!

This is a fairly basic recipe, and you can make it for two or for a crowd. I hope you enJOY your time with your friends and fam over sports this season, whether its cheering for the Royals like my housemates, or for the Thunder, like me!

Garden Salsa

Course Appetizer
Prep Time 10 minutes
Total Time 10 minutes
Servings 6

Ingredients

  • 8-10 red and/or yellow Roma tomatoes mine were from my garden
  • ½ medium red onion
  • ½ jalapeno pepper
  • 2 limes juiced
  • sprinkle of salt
  • handful chopped cilantro

Instructions

  1. Roughly chop tomatoes, onion, pepper and cilantro.
  2. Pulse in food processor 3-5 times, or until the desired consistency.
  3. Drain off any excess tomato liquid, if desired.
  4. Add in lime juice and salt, to taste.
  5. EnJOY!
