Creamy Cajun Shrimp Pasta

Creamy cajun shrimp pasta is a comforting, hearty, one-dish meal that comes together super quickly!

HELLO THERE! I exist!

A lot has happened since the summer of 2019. Namely…We moved into a new house, I got pregnant, then the global pandemic thing happened, then I delivered said baby, and I’m now working from home and we’re trying to all stay healthy and fed! Needless to say, the blog has kind of fallen by the wayside. These days we’ve been surviving on a lot of Trader Joe’s meals (shoutout to Chicken and Shiitake Mushrooms!). However, it DOESN’T mean I haven’t stopped dreaming up ideas to share! My ideas list continues to grow, especially since I’m doing LESS cooking these days, and the lack of restaurant dining definitely has me pining for some good, unique food. The ideas will just be rolling out of the factory at a slower rate for the foreseeable future.

But this cajun shrimp pasta is a dish that I’ve been making consistently since the summer I left you. People have been asking for the recipe every time I post on IG, and sometimes it’s in it’s best form (as described in this recipe), and sometimes it’s not. It all depends on what I have on hand at the time. But most of these items are pretty much staples around here.

Most of the time, there are no tomatoes. Sometimes, there are no veggies at all. But if you have seasoning, cream, cheese, shrimp and pasta, the basic concept can be yours ASAP. This creamy cajun shrimp pasta comes together wicked fast and makes even this new mom feel like she accomplished putting together a decent meal.

SALT WARNING! The cajun seasoning we had been using was a blend that I got as a branded freebie at a conference a few years ago. It was super good, and just the right amount of spicy. We recently ran out, and was devastated to find out that the cajun blend we picked up at the grocery store was mostly salt and inedible for our purposes. Then I checked out Penzey’s and they (of course) have a great blend that isn’t too salty! So depending on the seasoning brand you use, you may need to adjust your measurements. So season and salt to taste!!!

Creamy Cajun Shrimp Pasta

Creamy cajun shrimp pasta is a comforting, hearty, one-dish meal that comes together super quickly!

Cook Time 20 minutes

Ingredients

  • 1 1/2 C. penne pasta
  • 1/4 C. olive oil
  • 10-12 large shrimp peeled, deveined and tails removed
  • ½ t. & 2 1/2 t. cajun seasoning** I use Penzey’s
  • 15-20 cherry tomatoes or 1 diced roma tomato
  • ½ C. onion diced
  • 2 large handfuls spinach
  • 3/4 C. heavy whipping cream
  • 2 1/2 t. cajun seasoning** I use Penzey’s
  • 1/3 C. parmesan cheese finely grated
  • Salt to taste** see note

Instructions

  1. Boil water in a medium saucepan and prepare pasta. Drain when pasta is al dente. Set aside.

  2. Dice onion, halve cherry tomatoes and tear spinach, if necessary.

  3. Heat olive oil in a medium skillet on medium-high.
  4. Sprinkle ½ t. cajun seasoning on shrimp and toss. Using tongs, add shrimp to the skillet. Flip after 1 minute, and cook for 1 more minute. Remove from pan and set aside.

  5. Return pan to the heat.
  6. Saute tomatoes and onions in the oil, until tomatoes break down and onions are translucent. Turn heat to low.
  7. Add spinach and pasta on top to the skillet. Toss to wilt spinach.
  8. Add in cream and stir in parmesan cheese. Seasoning with 2 ½ t. cajun seasoning and also salt to taste.
  9. Add in shrimp.
  10. Simmer until it reaches desired thickness.
  11. Serve immediately & #enJOY!

Recipe Notes

NOTE: Depending on the cajun seasoning brand you use, you may need to adjust your measurements of seasoning and salt. So season and salt to taste!!!
