Completely constructed from local finds, this patriotic parfait will have you waving the flag of surrender to this fruity treat!

You can’t celebrate Flag Day properly without a Patriotic Parfait! Plus, it’s a “twofer” because you can also do it again for the 4th of July! Or in the UK. Or France. Or Texas. Or even North Korea. Truly, red white and blue is a popular flag combination, if we’re being honest. That’s why I named it Patriotic Parfait, because the original name was Flag Day Parfait (but who searches for that, right?!). (Also, if you’re unfamiliar with a twofer, it’s a shortcut for the phrase “two for one.” Oklahoman lesson of the day.)…

These homemade granola bars are full of nuts and fruit, perfect for a backpacking trek or packing in a lunch!

After lots of trial and error, I’m happy to present to you fun, yummy and (mostly) healthy homemade granola bars! If you’re reading this, we’re on a real-life vacation! But not the relaxing-on-a-beach kind…We’re in Scotland, currently traveling along the John Muir Way, a 134-mile walking trail from Helensburgh to Dunbar (west-to-east coast). I may die when we get home, but we’re probably having a great time so far!

This is hardly a recipe… but this easy chocolate dipping sauce is a fast way to turn fruit into a dessert (as if it wasn’t already). I even use the microwave! It’s slightly reminiscent of Nutella, but a little bit less hazelnutty and a little more peanutty!…

This salad is called Atomic Salad because the fresh garlic in the dressing packs a big punch! It’s perfect for a quick but flavorful addition to dinner.

Is your hum-drum salad life getting you down? No worries – the Rankins bring you: Atomic Salad! Justin loves this salad, but I think it’s mostly because it has olives and they’re “probably” in his top 5 favorite foods. I’m pretty sure that we had this with dinner the first time I went to his parents’ house for dinner when we were dating. I’m not an olive fan, but you can go without! (Just give them to your resident olive-eater.) I’m grateful that Justin’s mom was willing to share this with me and gave the OK to share it with you!

Homemade Peanut Butter

This is an easy way to make creamy homemade peanut butter with no added sugars or processed ingredients!

Homemade peanut butter is so easy. It requires peanuts and a trusty food processor. And that’s all. Unless you want to get fancy. I usually sprinkle in a little sea salt for good measure, but that concludes the exceedingly long list of ingredients! It will sometimes thump around in your machine, but just keep letting it go, and it will eventually turn smooth….

Five Ingredient Pasta Sauce

This is my go-to pasta sauce. It can easily be scaled up or down, and is bright and flavorful without the day-long simmer of a traditional marinara sauce. It’s also super quick and easy, and is perfect for a weeknight meal. This time, I made a double batch for my community group. But it’s often the base for much that we do around here. (It would probably also be a great pizza sauce.)

Fresh Pasta

There really are only four ingredients in fresh pasta. And with a little bit of love, you can have it in your home – either now or later! It can be cooked right away (which I do with ravioli, as featured here), or even hung to dry for a day or two. It cooks up a little differently, but tasty all the same. I found that when I cooked the noodles which had been dried, they gave me a bit more of an eggy flavor, perfect for another recipe I’ve got in mind…

I like to make a good smoothie bowl when I need something easy. They are typically the most convenient when Justin is studying for the day and I’ve got to fend for myself for lunch. I was having one of those Saturdays recently, when I found all the fruits I had lovingly hand-chopped and frozen in bags for the winter. I told myself I should use them before they get all yucky or summer came and I’d have more berries to freeze (whichever came first).

I fell in love with making pasta in high school. I took a Creative Foods class with one of the greatest teachers ever (it’s probably because she’s British and we loved getting her to say “butter” with a hard “R” sound). One of our tasks one week was to prepare fresh pasta. The whole process was absolutely nuts with 4 people to a kitchen station. After that class, I pined away for fresh pasta, but never again made my own. Until I got married. And someone was actually crazy enough to purchase a pasta machine I had put on our registry like we would USE it.
