These homemade granola bars are full of nuts and fruit, perfect for a backpacking trek or packing in a lunch!

After lots of trial and error, I’m happy to present to you fun, yummy and (mostly) healthy homemade granola bars! If you’re reading this, we’re on a real-life vacation! But not the relaxing-on-a-beach kind…We’re in Scotland, currently traveling along the John Muir Way, a 134-mile walking trail from Helensburgh to Dunbar (west-to-east coast). I may die when we get home, but we’re probably having a great time so far!

Justin loves this salad, but I think it’s mostly because it has olives and they’re “probably” in his top 5 favorite foods. I’m pretty sure that we had this with dinner the first time I went to his parents’ house for dinner when we were dating. I’m not an olive fan, but you can go without! (Just give them to your resident olive-eater.) I’m grateful that Justin’s mom was willing to share this with me and gave the OK to share it with you!

Who doesn’t love an easy chicken salad? Well…me, at one point. I think it’s because I have this distaste for all condiments besides BBQ sauce, and mayo just doesn’t ever really cut it for me. Although I’ve definitely warmed up to mayo in chicken salad, I knew there was a way to health-ify this lunch favorite. It turns out, you can use plain Greek yogurt! Yep – even though I also use it for sour cream. It’s so versatile!

This is my go-to pasta sauce. It can easily be scaled up or down, and is bright and flavorful without the day-long simmer of a traditional marinara sauce. It’s also super quick and easy, and is perfect for a weeknight meal. This time, I made a double batch for my community group. But it’s often the base for much that we do around here. (It would probably also be a great pizza sauce.)

Easy Berry Smoothie Bowl

I like to make a good smoothie bowl when I need something easy. They are typically the most convenient when Justin is studying for the day and I’ve got to fend for myself for lunch. I was having one of those Saturdays recently, when I found all the fruits I had lovingly hand-chopped and frozen in bags for the winter. I told myself I should use them before they get all yucky or summer came and I’d have more berries to freeze (whichever came first).

Bulgogi (Korean BBQ Beef)

Korean BBQ is one of the country’s greatest inventions. Bulgogi falls into this category, thinly sliced beef, sweetly marinated and grilled and served with rice. I nearly always have these ingredients on hand, with the exception of the meat, but we don’t make it near as often as we would like. Seeing that it was Lunar New Year, it was a great excuse for me to hit up the little Korean store we have. They make trips to Dallas and buy things at the Korean supermarkets to stock their store. I felt honored to have snagged some of this meat!

Sweet and Spicy Chili

In case you’re not a regular around these parts, this post is late. It’s late because I entered this recipe into a Chili Cookoff at work. On Thursday. By the time I made it on Wednesday night, it was waaaaay past the sun’s bedtime (and mine too) so I had to opt out of photo taking.

This is a "super bowl" of sweet and spicy chili with chopped sirloin and pineapple.

Plus, I wanted to wait to let you know if it became Award-Winning. It didn’t. And I’m not bitter. But everyone who knew which one was mine told me it was really good. Whether or not they said it only to preserve our friendship is unclear, but at least Justin and I thought it was good!

However, a similar chili HAS won awards…Dad used to enter a chili like this into the church’s chili cookoff. I asked him what was in it when the time came for my cookoff and he sent me a list of ingredients and said “most of this stuff is all to taste.” You can imagine how hard my eye-roll was. Thanks, Dad. Thus, this chili recipe was born through LOTS of tasting. Justin mostly tasted, because I’ve got a sinus infection right now and can’t hardly taste anything!…
