Tomato Basil Risotto [V, GF]

November 12, 2015 by 918 Plate Leave a Comment

This tomato basil risotto is savory and perfect for a light meal by itself!

This dinner came together when I didn’t have a plan and went digging through our kitchen and garden. We finally dug up the tomato plants this week and used the very very last of the tomatoes. Check out the size of those roots. Our basil plant has been chopped down, but there are still a few sprigs left for propagating for winter. Garlic is in the ground for the first time, and even our spaghetti squash still has a chance! We’re feeling pretty good as we brace ourselves for winter.

Chicken and Dumplings

October 29, 2015 by 918 Plate 8 Comments

This post’s main product of pastured chicken was provided as a sample by Cars and Cows Farm in Pemeta, Oklahoma. Opinions of the product are my own.

Y’all. I feel like an official Oklahoman now. This chicken & dumpling recipe has everything I love about Cracker Barrel’s chicken & dumplings. What’s not to love? Salty broth with squishy dumplings?? Now THAT sounds like a food I could eat every day. Seriously. With half a chicken, we even generously fed 4!

These Cracker Barrel lookalikes are made from fresh, local, pastured chicken!…

Fall is now in full swing, and if your weather is anything like ours is, I hope you’re enjoying it! I watched this hilarious video on “leggun’ weather” two nights ago and seriously can not stop watching it. Over and over. Seriously. You’re welcome.

This Butternut Squash soup warms the heart with a blend of Thai spices and a coconut milk base!

Basic Risotto

Basic Risotto | 918 Plate

Last year, Justin and I attended a free technique class at Williams-Sonoma for risotto. Little did I know I would come away with a love for risotto and the process both. It was so much fun to watch and experience, and was a great way to show a food that is notoriously daunting isn’t all that hard after all! Plus…free food always tastes better!…

Greek Yogurt Mac and Cheese with Bacon

September 3, 2015 by 918 Plate 2 Comments

Greek Yogurt Mac and Cheese with Bacon | 918 Plate

Everybody loves macaroni and cheese, right? It’s very high on my list. Partly because cheese is a main ingredient, and it is on “the list” of foods I would live on. I’ll eat it all – fake cheese, real cheese, rotini, shells. Like…I love a good greek yogurt mac but also would kill over a bowl of Velveeta shells. Foodie struggles. My dad always used to say if I kept eating so many noodles, I would turn into one. Luckily…I’m almost 24 and still not a noodle!

Greek Yogurt Mac and Cheese with Bacon | 918 Plate
This is a quick weeknight meal that we make often, with or without the bacon. Leave out the bacon for a simple vegetarian dish. We seem to always have the ingredients on hand and it comes together very quickly. You can use any combination or type of cheese you want….

Margherita Cauli Crust Pizza | 918 Plate

Cauli is back in action! After my first successful experience with my new friend Cauli (see here), my friend Cori suggested a Cauli Pizza on my Instagram. Of course, I had to try!! I hit her up for her favorite recipes (here and here), and did my own research from there.

You guys. This is way yum. I am always surprised by the versatility of cauliflower, especially for having NEVER eaten in previously in my life. But I did see it as a chicken substitute the other day…the jury is still out on that one.

Roasted Garlic Cauliflower Alfredo

First of all, I picked up this gorgeous cauli from the Tulsa Farmer’s Market for $3. It was worth every penny.

Y’all, this stuff is incredible. I stumbled across it on Pinch of Yum, and was extreeeemely skeptical, but trust me.

Roasted Garlic Cauliflower Alfredo | 918 Plate

Before this, I’d never actually eaten cauliflower before. Is that weird? I’m almost 24. I don’t know, blame my mom or something. I think it’s because I’ve always associated cauliflower with broccoli, and broccoli and I have never really gotten along.

These mango fish tacos are a delicious pan-fried treat with a bright twist!

Mango Fish Tacos | 918 Plate

My co-worker loved the fish tacos at the Boulder Grill downtown. We venture down there twice a month or so at lunch time. They had a great blackened tilapia with a sweet slaw and onions that make your breath smell…heavenly.
