I named this recipe millionaire’s bruschetta avocado toast. Do you know why? Apparently millennials love avocados with everything. And apparently a rich dude came out and said that millennial’s will never become millionaires because they just like to spend too much money on eating avocado toast. Now, avocado toast can be expensive… You might pay anywhere between $5 and $19 for a slice of creamy and crunchy goodness. But will eating it really keep you from becoming a millionaire? My friend Curtis from Smart Money Nation tells us whether the millionaire was right, or if we could all be millionaires, even while enjoying our avocados!

Especially when avocados are on sale (I got avocados at Sprouts for $.50 last week!), it can be a great, cheap, easy snack full of healthy fats and whatever you want to put on top! The most basic avocado toast recipe that seems to be the most popular is just an avocado, salt and chili flakes. One of the things that make it seem extra-authentic is the thick flake salt. I just used to kosher salt for the same effect.

You can also make a breakfast one, this version was inspired by my Egg McMuffin recipe… I love mixing eggs and green onions together! It would probably also be great with some bacon.

The recipe I’m going to leave you with today though, it’s a little bit more fancy. It doesn’t have too many parts and is a bruschetta toast! I figured that guacamole is always great with tomatoes in it, so why not give your avocado an Italian flavor?

Local Spotlight: It’s tomato season at the farmers market! (Mine still haven’t come in…). I got nearly all of the ingredients locally, with the exception of the avocado. Prairie Creek Farms eggs, Farrell Bread, tomatoes, onions, garlic from the farmers market, and basil from the backyard!

Millionaire's Bruschetta Avocado Toast

Feel like a millionaire with bruschetta avocado toast that you can make at home!

Prep Time 5 minutes
Total Time 5 minutes
Servings 2 slices

Ingredients

  • 1 avocado
  • 2 slices of your favorite bread
  • 1 roma tomato
  • 4 basil leaves chiffonaded
  • 1 garlic clove
  • 1/2 t. minced garlic
  • 1 T. minced onion
  • Olive oil
  • Kosher salt
  • Pepper

Instructions

  1. Toast bread!
  2. Crush a clove of garlic and wipe it on both sides of the toast.
  3. Dice tomatoes, mince garlic and onion, and chiffonade the basil. Combine in a small bowl.
  4. Mash avocado and spread on top of the bread.
  5. Top avocado with tomato mixture.
  6. Drizzle with olive oil and sprinkle with salt and pepper.
  7. #enJOY!
