The BEST Salad Dressing Ever – Strawberry Spinach Garden Salad [GF, V, mVegan]

The best salad dressing recipe is completed in a salad with strawberries and spinach!

This is the best salad dressing ever, promise. And maybe the weirdest story how I came across it. I went to a wedding a couple of years ago and this blessed salad was featured there. While I’m not a huge salad person, I am always a sucker for a spinach salad. And I took one bite of this one and said, “Oh my gosh. This is so good.” Which I have said about approximately zero salads on first bite, ever. No offense to the other salads that I do eat semi-regularly, but this was just exceptional. The dressing was sweet but also spicy, with the tang of a vinaigrette. I had to have it.

I patiently awaited the bride and groom to come back from their honeymoon and then immediately asked the bride where the salad came from and where I could figure out what was in the dressing. It turns out, her family had self-catered the wedding, so instead of a recreation, I scored a RECIPE! The original had candied walnuts and dried cranberries and used field mix greens, and it was delicious. For a switch-up, I used a spinach and strawberry combo instead, because I love strawberries on salad!

There’s not a lot to this recipe. Throw everything in the blender, give it a whirl, and top your salad with things that taste good. I will give this tip, however, that my kindergarten teacher always used to say about using liquid glue: “a little dab’ll do ya.” The onion and garlic spice will go a long way on each serving and you probably only need a tablespoon or two to lightly coat your salad! This is great, because this recipe makes loads of dressing – perfect for a crowd. I’m holding it as a contender for Best Salad Dressing Ever until further taste testing.

The BEST Salad Dressing Ever - Strawberry Spinach Garden Salad [GF, V, mVegan]

Prep Time 10 minutes
Total Time 10 minutes
Servings 6

Ingredients

  • 1/2 C. cider vinegar
  • 1/2 C. vegetable oil
  • 1 C. loosely packed parsley sprigs
  • 1/2 red onion
  • 3-4 garlic cloves
  • 2 T. sugar
  • 1 t. oregano dried
  • 1/4 t. salt
  • 1/4 t. pepper
  • 5 C. baby spinach
  • 1/2 C. Feta cheese
  • 8-12 strawberries
  • 1/4 C. candied walnuts optional, not pictured

Instructions

  1. Blend cider vinegar, oil, parsley, onion, garlic, sugar, oregano, salt and pepper in a blender. Set aside.
  2. On a bed of spinach, top with feta cheese and sliced strawberries.
  3. Spoon 2 T. of dressing per serving or bowl of salad.
  4. #enJOY!

Recipe Notes

Naturally gluten free and vegetarian. Exclude cheese for a vegan option.

    Lovely. Personally I wouldn’t add that much sugar to a vinaigrette, but that’s just me. Especially with wonderfully ripe strawberries. Beautiful photos.

      I wouldn’t normally either…but it really helps to cut the pungent nature of the raw onion!
