This avocado salsa is a cross between salsa and guacamole has everything that you love about both and is great for dipping!
My bestie Molly is a true blog hero. Last year, her family was just chatting about “food ideas they’d like to try.” She wrote them down and passed them along, and whenever I need to be inspired, I glance over her list and think about the local stuff available at the time and how I can make her family’s list a reality! That’s the simple inspiration for this avocado salsa. I thought about all the good parts about salsa, and adding avocado. to make it that much better!
I also chose to add some cheese to the avocado salsa – because cheese. It was a great complement to all of the flavors, and gave a nice texture. Other things I thought about adding: black beans, corn (think, cowboy caviar!), bell peppers, the list goes on. Spread on top of a tostada shell or wrapped up in a tortilla with some lettuce, I think this would even make a pretty good vegetarian burrito. It’s filling and tasty!

Local Spotlight: This time of summer is a great time for onions and garlic at the farmers market! I think when I made this, it was still a little early for tomatoes (mine haven’t turned red yet), but I bet this week we’ll start seeing them!

Avocado Salsa
Ingredients
- 5 roma tomatoes
- 1 clove garlic
- 1 bunch cilantro
- 1 jumbo avocado or 1.5 regular avocados
- 1/4 red onion
- 1/4 white onion
- 2 limes juiced
- 1/2 C. queso fresco
- 1 jalapeno
- 1/2 t. Kosher salt
Instructions
- Chop cilantro.
- Dice tomatoes, avocado and onions.
- Mince garlic and jalapeños.
- Combine all ingredients in a bowl.
- Crumble in queso fresco and sprinkle salt.
- Serve immediately.

Can leave out queso fresco to make Vegan and Dairy-Free.
