It’s getting a little scarce around here, you guys. Justin is finally coming home this weekend for a while week… and I have yet to go to the grocery store for anything involving cooking for myself (although I did go to buy stuff to make more No-Chicken Noodle Soup for church group…but I actually put chicken in it! I also made this simple avocado alfredo pasta when he was gone – it turned out so amazing that I made it for him, and I also ate the leftovers a couple of days ago. It’s perfect when you don’t have a whole lot left laying around!
This is a super fast and easy dinner if you’re home alone, or even feeding a crowd! I know that most avocado-based sauces exist to help “vegan-fy” foods that you love. This is not that type of sauce. It’s got 5 ingredients: Avocado, milk, cheese (Well…I guess two types of cheese), salt, pasta. Yep. That’s it. It can be gluten-free if you use your favorite gluten free pasta!

5-Ingredient Avocado Alfredo Pasta [mGF, V]
This avocado alfredo is creamy, rich, and smooth, filled with cheese and topped off with some salt (and maybe a little extra cheese)!
Ingredients
- 1 avocado small and ripe
- ¼ block of Gournay cheese like Boursin
- 1 C. milk
- ½ C. pasta of your choice
- ¼ C. Parmesan cheese
- Salt to taste
Instructions
- Bring a pot of water to a boil in a medium saucepan.
- Mash avocado with a fork.
- On low heat in a small saucepan, combine avocado with milk and cheese. Stir occasionally, heat until warm. (Be careful to not let the sauce break)
- Prepare pasta according to directions.
- In a blender or using an immersion blender, blend sauce until smooth.
- Return sauce to pan and stir in parmesan cheese.
- Pour over pasta and serve immediately.
- Salt (and pepper, if preferred) to taste.
