This Pimm’s Pineapple Mint Spritzer is inspired by Crazy Rich Asians, and is the perfect summer refresher!
Confession: This recipe for a pineapple mint spritzer was not an original idea. I was reading Crazy Rich Asians, and read this:

And it struck me as a simple, yet satisfying and refreshing cocktail or punch! J tested it out and threw in a few shakes of citrus bitters that we had in the cabinet and I loved this addition. The bitters gave a little depth to this sweet drink, that made it feel herbal and garden fresh. I find Pimm’s such a curious liquor, since it’s proprietary and nobody can really pinpoint what “that flavor” is in it, but most people understand that citrus and tropical flavors go really well in it!
Full disclosure, I think the only other time I’ve had Pimm’s was when I was studying abroad and went to someone’s birthday party. Someone had made a big punch bowl of Pimm’s Cup with strawberries and cucumbers and ginger ale, maybe? And we played Flip Cup with it… So, running across this pineapple mint spritzer in the book was a nice reminder about Pimm’s and that it was time to start thinking about party drinks!
This recipe makes two glasses, but you can easily scale it up to make a large punch bowl or drink dispenser at a backyard party. Give your guests something a little different, but still delicious and familiar! You can’t go wrong with an icy cocktail to quench your thirst in the warmer weather.
Pimm’s Pineapple Mint Spritzer
- 1/3 C. Pimm’s No. 1 Liqueur
- 1 C. pineapple juice
- 1 lime
- 10 mint leaves
- club soda
- 10 dashes of citrus bitters
- Roll and lightly crush mint leaves in your hands to release oils.
Add mint, Pimm’s, juice, and bitters to a small shaker.
- Slice lime in half, and juice half, cutting the other into wedges.
- Add in juiced lime and ice and shake.
- Equally pour into two glasses, and top with club soda.
- Stir, and garnish with a lime and sprig of mint.
